Overview

Role Overview:

The Kitchen Lead/Manager is responsible for managing all day-to-day functions of the kitchen during opening, mid & closing shifts. Their focus is on managing the brand, ensuring food quality & plate presentation meets the brand expectation, managing inventory, and controlling costs as it relates to product and labor to ensure budgets are met in the BOH operations. Key responsibilities include making recommendations regarding the BOH hiring process, managing, supervising, and training restaurant team members.  You must be able to regularly exercise independent judgment and discretion on matters of significance to Timber House Brewery & Distillery while ensuring an exceptional guest experience.

Functions & Responsibilities

  • Perform Open / Mid-Day / Closing duties 
  • Conduct daily briefings (Pre-shift team meetings) on matters of importance to the team 
  • Manage all necessary repair and maintenance issues 
  • Exercise complete discretion in all Company & staff matters 
  • Ensure 100% compliance with all Timber House Brewery & Distillery,  proprietary recipes, Company policies and laws 
  • Make recommendations to management team concerning development, promotion, and disciplinary action affecting team members 
  • Ensure safety & sanitation
  • Monitor food quality and execution
  • Conduct regular food/menu reviews staying current w/ local & seasonal availability
  • Prepare, place & receive orders of food and beverages w/ vendors
  • Conduct weekly inventories to ensure that proper levels are stocked and to assess ordering patterns and changes
  • Monitor and support daily prep production
  • Coach, mentor, develop, train and discipline subordinates  

Qualifications: 

  • Minimum 2 years full-service, high volume, restaurant kitchen management experience 
  • Current Manager’s Food Handler’s Card 
  • Strong communication and ability to work cohesively with all levels of management, all departments, and all co-workers in a team 
  • Flexible Work Schedule which may vary based on business demands 
  • Must be able to lift and carry supplies and equipment up to 50+ lbs. throughout shift; place items on high and low shelves in storerooms, service areas, reach-in coolers, and freezers
  • Must be able to bend, stoop, reach, wipe, lift, grab repetitively, and raise arms above head with sufficient mobility to move and operate in work area
  • Ability to perform job functions with minimal supervision, attention to detail, and speed
  • High personal integrity, professionalism, and maturity
  • Ability to work in a fast-paced environment
  • Solid relationship management and performance management skills
  • Ability to motivate and direct team members and work effectively in management team
  • Exceptional interpersonal skills, with a focus on listening and questioning skills
  • Strong writing and documentation skills
  • Ability to absorb and retain information quickly w/ keen attention to detail
  • Exceptional guest service w/ proven problem-solving abilities
  • Ability to stand and walk around a restaurant to supervise operations for 8-10 hours
